Planning a South Delhi event and worried the biryani won’t land with every table? A mixed guest list needs a mixed handi strategy — not one flavour cranked to the loudest possible spice, but a spread that meets people where they are. Below is the working shortlist we ship most weeks, split by palate rather than by feature.

Awadhi register — for guests who want aromatic, not loud

Awadhi biryani grew out of the royal kitchens of Lucknow, and its flavour vocabulary is layered rather than hot — saffron, cardamom, mace, cloves, kewra doing the work, chilli sitting back. Rice and marinated meat cook together inside a dough-sealed handi, so every grain finishes in the same aromatic steam. Best served to a table that includes elders, guests unfamiliar with heavy spice, or anyone who wants to taste the meat marinade instead of firepower.

Hyderabadi register — for the spice-loving crowd

Our Hyderabadi Chicken and Mutton Dum Biryanis lean the other way. Fiery marinade, brown-onion base, a wetter masala that stains the rice. The mutton biryani follows the kachchi method — raw marinated meat is layered under partly-cooked rice, and both finish together inside the seal. This is the handi to order when the table is younger, when the invite says “come hungry,” or when you want the aroma to hit before the pot lands.

Vegetarian tables — two proper handis, not a substitute

Vegetarian guests get their own sealed handis rather than a spoon out of the meat pot. Hyderabadi Veg Dum Biryani layers paneer, potato, carrot, beans and cauliflower into saffron rice; Hyderabadi Kathal Dum Biryani uses tender raw jackfruit that shreds like meat when it cooks. Classics — chicken and mutton, always in the mix

Some guests don’t need to be surprised. Chicken biryani is the safest anchor for a table you don’t know well, and mutton biryani is the celebration order — richer, slower, always the first pot to empty at a wedding side-lunch. For office spreads with 20+ people, a 2 kg chicken + 1 kg mutton handi covers most preferences without over-ordering.

Chef specials — the layer on top of biryani

Order a Dilli-style qorma or ghee roast alongside the biryani and the plate turns into a spread. Mutton Qorma is a rich onion-yoghurt gravy that pours cleanly over rice; Chicken Qorma is the milder cousin. Mutton and Chicken Ghee Roast are drier, spice-forward, and eat best as a side rather than a main. All four are sized by the weight of the meat — not the finished gravy — which is worth checking against your guest count.

Can biryani be vegetarian?
Yes. We cook Hyderabadi Veg Dum Biryani (paneer + seasonal vegetables) and Hyderabadi Kathal Dum Biryani (raw jackfruit) using the same sealed-handi dum technique as the meat handis. Both come in 250 g to 4 kg pot sizes.
What dishes pair well with biryani?

Is there a minimum order for free delivery?
Free delivery within 10 km of Sangam Vihar kicks in above ₹1,500. Below that a delivery fee applies. Beyond 10 km we still deliver — the fee is quoted on WhatsApp based on distance.
How far in advance should I place my order?
Three hours ahead is the minimum for chicken, veg and kathal biryani. Mutton biryani and the chef specials (qorma, ghee roast) need a day’s advance notice so we can plan the marination and kitchen slots properly.
